These traditional Dutch cookies from Arnhem, Netherlands, first created around 1829 by baker Hagdorn, are also called Arnhemse Meisjes. They are buttery, flaky, and crisp with a caramelized coarse-sugar coating and a light, slightly puffy texture, traditionally made from a yeasted dough of flour, milk, yeast, butter, salt, and a touch of lemon juice that rests overnight, is rolled out in sugar, shaped into ovals, and baked until golden. They are best enjoyed with coffee or tea. Sold in a set of 3.
